I could sit here and tell you all about my day and how i came to making this delicious recipe .... but lets just cut to the chase right ?! It was hot, I was hungry, and ya girls sweet tooth is MAJOR this week.... enter frozen acai bites ! It's everything you'd put in an acai bowl all packed into a little frozen treat. It's as satisfying as a chocolate covered sorbet .. but whole lot healthier ! I've kept this recipe completely refined sugar free , dairy free, gluten free, and it's actually got a decent amount of protein and healthy fat as well .. all the more reason to have one ( or four ). Let's get to it ...
1 Acai packet*
1 Scoop vanilla protein*
1 Cup frozen blueberries
1 Cup yogurt*
1/4 Cup Almond milk
1/3 Cup peanut butter
1/2 Cup of dark chocolate chips*
1/4 Cup shredded coconut
You will also need some sort of mold for the bites, i used a silicone ice tray and it worked well to pop out the cubes, i highly suggest making it this way. You can use a muffin tin too but make sure to spray it so you can get the bites out !
1. Blend the Acai packet , blueberries, yogurt, banana, almond milk and vanilla protein in a blender until completely smooth
2. Pour the smoothie mixture into the molds and freeze for a few hours until it is solid enough to layer
3. When you are ready for the next step, melt the chocolate on a double boiler until it comes to a smooth consistency and then whisk in a dash of almond milk to give it more of a ganache consistency so it isn't so hard when it freezes
4.While your chocolate is metling, put a dollop of peanut butter on each cube and smooth out evenly
5.Pour melted chocolate on top of the PB layer and smooth out
6.Sprinkle the top of the bites with your favorite acai bowl toppings
7.Re-Freeze the cubes ... when they are all done you can pop them out and put them in a seperate container ! Enjoy it as a dessert !
-I used Sambazon Acai frozen packets , use any you like!
-I used a clean plant based vanilla protein by Tropeka
-I used a refined sugar free chocolate chip made by Santa Barbara Chocolate co. ... some other companies that make refined sugar free chocolate are HU kitchen and Eating Evolved.. or you can just use regular chocolate chips , it's all good!
-I used coconut yogurt , you may use whatever yogurt you want or even Kefir to give these a nice consistency and the added benefit of probiotics
-Instead of shredded coconut some awesome toppings could be ...... goji berries, granola, pumpkin seeds, cacao nibs or ALL of them !
-You can use whatever nut butter you have on hand. I used peanut butter but almond butter would be amazing as well!
-Another way to make these is as an ice pop , just put a skewer or Popsicle stick right in the middle of the cube
